Grandma’s Coconut Cream Pie

Ok, here it is, the best coconut cream pie.  This filling is a “generic” filling and you can make it any flavor, this one is coconut just by adding it!! I also used Paula Deen’s perfect pie crust which was really, really good, I’ll post the link for that too.. I doubled this recipe because I wanted a deep pie, but just this recipe is plenty!! 

1/2 cup sugar
2 T Corn starch
1/4 tsp salt
2 cups of milk
2 egg yolks
1 tsp vanilla
1/2-1 cup of coconut

In a medium sauce pan combine milk, sugar, salt and corn starch, cook on medium heat until thickened, then remove from heat, take 1 cup of mixture and place in another bowl, add yolks and vanilla, mix well, add back to the sauce pan, place back on burner and heat until bubbly, then add coconut.  Add to cooked pie crust and pop in the fridge for it to set up then top with cool whip!!
