Manicotti Makeover

Last night I made a manicotti recipe I had found, but as with most of the recipes I find, I did some…personalization!!  So here’s my version of manicotti, and I have to admit, its wonderful, even leftover, I had it for lunch today!!

8 ounces, weight Manicotti Noodles
1 pound ground beef, Browned
3 cups Mozzarella Cheese, Shredded, Divided
1/2 cup cottage cheese
2 whole Eggs Beaten
1-½ cup Prego Three-Cheese Spaghetti Sauce

Boil manicotti noodles 8 minutes. Drain. Meanwhile, make the filling: combine ground beef, 2 cups shredded cheese, cottage cheese, and eggs. Pour 3/4 cup sauce into a greased 9 x 13 pan. Stuff noodles with filling using a large Ziploc bag with a corner cut out. Arrange filled noodles on the sauce in the pan in a single layer. Top with an additional light layer of sauce (3/4 cup or so). Cover with foil and bake at 375ºF for 25 minutes. Sprinkle with remaining mozzarella cheese. Cover again with foil. Allow cheese to melt five minutes and serve
