Leftover Turkey & stuffing pot pie

25 Nov

Cut up leftover turkey (especially dark meat) into 1/2-inch pieces. Place in a mixing bowl and add leftover green beans and gravy, or greenbean casserole. If you have a small amount of leftover mashed potatoes add them as well. Toss to combine and season to taste with salt and pepper. Transfer to a deep-dish pie plate or a 9 x 9 casserole. Top with a layer of leftover stuffing. Brush the stuffing with melted butter. Cover with foil and bake at 350 F for 30 minutes. Remove foil and bake until top begins to crisp. Then enjoy!!

Soooo yummy and easy to make. I did increase the water by 1/2 cup and added 1/4 teaspoon of sage and 1/8 teaspoon of dried thyme and 1/4 teaspoon of garlic powder. This made it even more tasty. Thanks for the recipe 🙂

I have made something like this many times. I usually use the stuffing in the bottom of a round pie plate as the bottom crust then add the turkey/green bean casserole mixture and top it with the mashed potatoes (and serve with gravy and rolls if there are any left).

That is a great idea, thanks for sharing that tip, at this point I’m not sure I can eat leftovers again!!!
