1 tablespoon canola oil or olive oil
1 cup diced onion
2 cloves garlic, minced
1/2 green bell pepper, diced ( freeze the other half sliced/diced or save for a snack)
1/2 red bell pepper, diced
1 pound lean ground turkey
2 15 ounce cans black beans, drained and rinsed
1 14.5 ounce can diced tomatoes with green chiles, or Rotel
1 14.5 ounce can tomato sauce
1 cup frozen corn
1 tablespoon chili powder
1 teaspoon oregano
1. In a soup pot, heat the canola oil over medium-high heat. Add the onion, garlic and bell pepper; cook, stirring occasionally until slightly softened.
2. Add the turkey and cook until no longer pink, breaking meat up, you don’t want any large pieces. Add the beans, tomatoes, tomato sauce, corn, chili powder and oregano. Bring to a boil. Reduce heat, simmer 15 minutes or until ready to eat!
