Black eyed peas and bacon
4 pieces Bacon
2 Tablespoons Butter
1 Tablespoon Red Pepper Flakes
½ pieces Onion, Sliced
1 bunch Swiss Chard
1 package Frozen Black Eyed Peas, 12-16 Ounce Bag
3 cloves Garlic, Minced
Cook bacon on a broiler pan at 400F for 15-20 minutes. When done, remove from the oven and set aside until cool enough to crumble.
Meanwhile, in a large skillet over medium heat, melt butter with your red pepper flakes Add your onion and saute until soft, about 5 minutes. Add your Swiss chard, season with salt and pepper to taste and wilt down, about 3-4 minutes.
Add your black eyed peas and 1/4 cup of water. Stir to combine and let the water cook off. When the liquid is cooked off, add your garlic and saute until fragrant, about 3-5 minutes. Top with cooked bacon.
