Cheesy Cream of Potato

Cream of Potato soup

4C chicken broth

4C thinly sliced potatoes

1/4 cup chopped parsley

2tsp Basil

1tsp salt

Pepper to taste

4C of milk

2 cups velveeta

1/2 cup butter

1/2 cup milk

1/2 cup flour

In a large pot boil potatoes in the ckicken broth, 20 min, then reduce to a simmer add seasonings, in seperate sauce pan melt 1/2 cup of butter, once melted add 1/2 cup of flour, stir to combine, then add 1/2 cup of milk stirring. Make sure to not have clumps, once thickened add to the potatoes and broth mixture, stir in milk and cheese, careful to not let the cheese stick and burn on the bottom..then serve once cheese is melted or when you’re ready!!

      I just realized the measurements are missing for all, you melt 1/2 cup of butter, 1/2 cup milk and 1/2 cup flour to make the roux

    Made this last night. Am having leftover for lunch as I sit here at my computer! Very yummy, however, I felt I could have cut the salt in half. I did not have Velveeta and substituted a shredded colby jack cheese which worked just fine. Will make it again. You could add any number of leftovers to this soup as well to add interesting textures and flavor as well. Thank you!!

      So glad it worked for you, probably the Colby added more salt than what the velveeta does, that could have been it. You can add broccoli to it and make a broccoli and cheesy potato, and maybe some chicken…the possibilities are endless!!
