Dinner Menu for 01/23-01/29

Monday: I’m going with JN to a roping tonight, so we’ll eat dinner there, he claims it’s the best around!

Tuesday:  Steak and Blue Cheese Wraps and probably chips or an easy side(I have frozen fries)

Wednesday: Bacon Cheeseburger Pizza and a Salad

Thursday: Crock Pot Country Style Ribs, baked potatoes, and Cole slaw

Friday: Cream Cheese Spaghetti Casserole, Salad, and cheesy french bread

Saturday: Bacon Sliders and Oven Fries

Sunday: Doritos Casserole,re-fried beans, and maybe rice. Oh, and maybe Sopapillas

Sausage Empanadas (made with biscuits)


9 eggs, divided
1/4 cup milk
Salt and pepper to taste
2 tablespoons butter
1 lb Sausage browned in crumbles
3 green onions, chopped (optional)
1 cup (4 ounces) shredded Monterey-Jack cheese
1 can (16 ounces) refrigerated jumbo biscuits (8 biscuits)
2 teaspoons water

1. Preheat oven to 350°F.

2. Beat 8 eggs and milk and salt and pepper to taste in large bowl with wire whisk until well blended. Melt butter in large non-stick skillet over medium-low heat. Add eggs; cook and stir 6-8 minutes or just until set. Stir in sausage and green onion cook 2-3 minutes or until sausage is hot. Stir in cheese; remove from heat.

3. Press or roll out each biscuit on lightly floured surface to 6-inch circle. Spoon about 1/2 cup sausage mixture onto center of each biscuit. Beat remaining egg with water; brush onto edges of biscuits. Fold in half; press edges together with fork to seal.

4. Place on baking sheet sprayed with cooking spray. Brush tops with remaining egg wash. Bake for 14-17 minutes or until golden brown. Serve warm with syrup.

Monday:  Salmon Patties and Macaroni and Tomatoes

Tuesday:  Chicken Fried Steak, Mashed Potatoes, Corn, Mac N Cheese

Wednesday:  Satueed Chicken and Tomato Pasta, salad and I’m sure bread!

Thursday:  Mozzerlla Stuffed Meatball Subs

Friday:  Chicken Tortilla Casserole and spanish rice

Saturday:  Cheese Steak Panini and homemade chips

Sunday: Roast, Potatoes and Carrots

Weekly Menu 01/09-01/15

Monday:  Three Cheese Toretellini(I bought the ones in the refrigerator section), topped with a little marinara sauce, garlic knots(frozen ones) and a salad-I’m really going all out tonight, but I’m tired!

Tuesday: Baked Pork Steak, restaurant style smashed potatoes, and green beans

Wednesday:  Baked sweet and sour chicken and fried rice (I think I’m using a box one, cheating)

Thursday:  Taco Soup and a cheese quesadilla for little E

Friday:  Ranch Burgers and Oven Fries 

Saturday:  Chic-fil-a Nuggets, mashed potatoes, corn, mac and cheese

Sunday:  Not so sure we’ll be home for dinner on Sunday, if so I might go with just Spaghetti…

Monday:  Taco Salad and bread pudding (I know they don’t go, but I wanted it!)

Tuesday: Steak Fingers, Bacon Potato Hash and Bacon “Stuffed” Green Beans (and leftover bread pudding for dessert)

Wednesday:  Italian Grilled Chicken, Caprese Salad, and a real salad

Thursday:  Sausage, Peppers, and Potatoes

Friday:  Date night with my hubby!!

Saturday:  Shrimp and Mushroom Pasta, but with Chicken and grilled romaine

Sunday:  Cuban Clubs and Homemade potato chips

New version of Poor Man’s Stew….

Well, as most of you know, that follow my weekly menu, last night was, Poor Man’s Stew.  I usually try to follow the recipes fairly closely, just so if I am trying something new, and going to blog about it, I can give an accurate opinion.  Last night I derailed, I went totally off course!!

To begin with, I didn’t really have “frozen vegetables” on hand, I know menu planner slacker, but I did have this little box of veggies that I had bought to take for my lunch on week, sometime ago, that I had yet to take!  It was a small Birdseye I believe, it had snow peas, cauliflower, carrots and I think that was it, but in a buttery sauce, so I used it.

I had browned my hamburger a few nights ago when I had made goulash and just still had it in the fridge, which was a time saver.  So I dumped in my hamburger, box of frozen veggies, 1 can of cut green beans, 1 can of Italian stewed tomatoes, 1 can diced tomatoes, 1 small can of tomato sauce, 1.5 cans of water, a few splashes of Worcestershire Sauce, a shake or 2 of Lawry’s Season Salt, garlic salt, sea salt, and I think that’s it, wait no it’s not, 1 can of New Potatoes, sliced!  Ok, so it “kind of” follows the same guidelines, but not really!  Then I put it on medium/high heat and let it simmer until I felt it was all heated through and combined, about 30-45 minutes…You could also put it all in the CP and let it cook on low alllllllllll day which would probably make it even better.

Whether it was a “real recipe” or not, it was good, and that’s all that matters, and I would put money on it that today it’s EVEN better, I should have brought it for lunch, but I didn’t, so we might have it again tonight, and I’ll skip cooking!!!

Monday: Goulash, salad, and bread

Tuesday:  We’re going to Tulsa for a return and Hornet basketball in Catoosa(So dinner out!)

Wednesday:  Poor Man’s Stew and Jalapeno Cornbread

Thursday:  Salmon Patties and macaroni and tomatoes, with bread and “butta”

Friday:  Christmas Dinner and not sure what I’m making yet…

Saturday:  White Chicken Enchiladas, rice and beans, and probably a salad, and doing some baking with my MIL for our trip!!

Sunday:  MERRY CHRISTMAS!!  We’ll be traveling this evening so I’m sure we’re grabbing something along the way……
