Salmon patties

1 (14 ounce) can salmon, drained
3/4 cup saltine cracker crumbs

1 egg, beaten
Canola oil and 1 T butter

Salt and pepper to taste

Preparation:

In large bowl, place salmon and cracker crumbs. Add egg, and salt/pepper and mix gently.
Form into four patties. Add canola and butter to a skillet. Add patties to skillet when butter melts. Cook patties for 3-4 minutes on each side until golden brown and hot.
